Asparagus officinalia ‘Jersey Knight’
Jersey Knight is a all male strain which translates to larger spears. The spears are super tender, bright green with purple bracts.
Planting: Make trenches 8” deep and 4ft – 5ft apart. Set crowns 12” to 18”apart and cover with 2” of soil. Over the season, gradually fill in the trench as the plants grow so at the end of the season the ground is level.
Harvest: Cut or snap off spears when 6-8 “high and 3/8 “inch in diameter. leave thinner spears to grow up to fern stage. As reserves of the roots are depleted with harvesting, diameters of spears will decrease. When no more 3/8 “inch in diameter spears are being produced the season is over.
